As a mom of a little one I find myself often skipping meals or even not eating at all. Most of my meals during the day are some sort of leftovers scraped together.
My latest concoction was actually quite delicious, filling and on the healthier side.
In the fridge I found zucchini, leftover spaghetti noodles, grape tomatoes and some fresh basil. All of these items (except the zucchini) were left over items from other meals.
I cut up and sautéed one whole zucchini in some garlic olive oil. Added some cold, leftover cooked spaghetti noodles and tossed in some grape tomatoes with fresh basil. Sautéed tomatoes give the dish a little kick of flavor. If you haven’t tried a sautéed tomato lately, give it a whirl.
The dish came together quite nicely and was filling as well. Yum yum! Love when I find a new meal in my leftovers.
